The Quilted Pig
This incredible waterfront dining experience located in the Moran Mansion features Chef/Owner Madden Surbaugh's upscale country cuisine. Chef Madden was previously the Chef/Owner of Steps Wine Bar in Friday Harbor. He was voted one of the “Northwest’s Best Chefs” by KCTS Channel 9 Public Television in 2008, recently awarded the Wine Enthusiasts Award of Unique Distinction and was featured on the television show Rachel Rays Vacations. The Quilted Pig features what Madden calls “fine dining quality in a fun and casual atmosphere.”
Chef Madden enjoys putting fun twists on classic dishes as well as creating innovative new cuisine ideas using locally grown, seasonal foods. He created the “Islands Certified Local” program and is a board member of the San Juan Islands Agriculture Guild.
“Working closely with local farmers is paramount to my business. It insures that we are using goods produced organically, sustainably, safely and humanly. The products raised and grown in San Juan County are world class in quality and we are lucky to have them available right next door.”
The name ‘The Quilted Pig’ was developed by Chef Madden from his “love of the idea that a beautiful blanket can be made from a bunch of fabric scraps. I try and create dishes where the final dish is elevated above the sum of its individual parts, like a quilt.” Madden considers the pig to be “one of the most versatile foods on the planet, from all of its varied preparations, to its ability to be used by so many different cultures. Pigs deserve our respect and I am happy to pay homage to them.”
Along with a dining menu featuring small and large plate offerings, Chef Madden offers an approachable and affordable bar menu, crafted cocktail program and comprehensive wine program featuring world staples, little know gems and local boutique wines.
“We make everything we can ourselves in-house, from homemade pastas, breads and pastries to fresh cheeses to sausages to cured and smoked meats. We truly are what we eat and we should be demanding a fitting quality of food stuffs."
Joining Chef Madden is Chef de Cuisine Peter Edris, who graduated with Chef Madden from New England Culinary Institute in Essex Junction, Vermont. He has been Executive Pastry Chef at the Five Star, Five Diamond, Relais and Chateau Fearrington House Inn. Chef Edris returned to New England Culinary Institute to become their Lead Baking Instructor. He later moved to Virginia, where he opened McLeod Bakery at Oak Gove Farm, a small bakery specializing in organic whole grain naturally leavened breads baked in a wood fired oven. In late 2003 Chef Edris moved to Portland, Oregon and joined Western Culinary Institute, which is now known as Le Cordon Bleu College of Culinary Arts. He has served as an instructor, Executive Chef, Department Chair and Dean over the past six years.
The Quilted Pig also features the talents of Sous Chef Joe Clow, who began his career as a student of The Culinary Institute Of America in Hyde Park, New York. Joe also worked at Mt. Washington Hotel in New Hampshire, then the Balsams Grand Hotel in New Hampshire before moving to Briarhurst Manor in Colorado Springs, CO. Joe moved to Washington to become Kitchen Manager of Heather Meadows Lodge at Mt. Baker, then became Sous Chef at Chef Madden's Steps Wine Bar in Friday Harbor in 2008.
